Cream of Cilantro Soup
1 bunch fresh cilantro
1 (32oz) container fat free chicken broth,divided
2 Tablespoons butter
2 Tablespoons all purpose flour
1 (8 oz) package cream cheese
1 (8 oz) container sour cream
1 garlic clove minced
1/2 tsp. ground red pepper
1/4 tsp. ground cumin
juice of one lime
Remove stems from cilantro and coarsely chop leaves. Process cilantro and one cup chicken broth in blender.
Melt butter in heavy pan and whisk in flour. Add remaining broth to flour mixture and boil one minute. Stir in cilantro mixture, cream cheese, and remaining ingredients except the lime juice. simmer soup for 15 minutes and add lime juice just before serving.
Add a few minced jalapenos for a kick. Garnish with cilantro leaves and/or red tortilla strips.
Excellent served with Grilled Flank Steak With Molasses Barbecue Glaze
