I hope you will take a few minutes to consider making your own homemade pudding. After making the version found here, I may never buy store bought boxed pudding again.
I'm posting this here more as a record and reminder for my own use. Heaven forbid Goody would decide to remove this recipe from her blog, I would be lost. I know, I know, I should just write it down on an index card and save it in my recipe file. Until I unpack and find my recipe box, this will do.
Yes, I'm still living out of boxes.
Full credit for this recipe goes to Goody. She refers to it as a filling. After all isn't filling and pudding the same thing? Maybe not, I'm not well versed in French cookery. I ate it like pudding.
1 1/2 cups of sugar
3 ounces unsweetened chocolate (finely chopped)
1/2 tsp. salt
2 1/2 tablespoons corn starch
1 tablespoon flour
3 egg yolks
3 cups milk
1 tablespoon butter
1 1/12 teaspoons vanilla
In a large saucepan mix together sugar, chocolate, salt, corn starch, and flour. Slowly whisk in the milk. Cook over medium whisking constantly until it reaches a boil. Boil for one minute. Temper the egg yolks with a little of the warm chocolate mixture. Add yolks to the saucepan. Cook for one minute. Remove from heat and stir in the vanilla and butter. Cool for 5 minutes, cover with plastic wrap, poke holes in the plastic wrap. Cool in the refrigerator.
I dare you to try and not eat this right out of the pan while it's still warm. It's that good!
I made it with the bananas as Goody suggested in her post. A graham cracker crust added a nice crunch to everything.
