Garden 2009




My yellow squash should be ready to eat by next weekend. I love to thinly slice, flour, egg wash and panko crumb these little yummies, then fry them lightly in olive oil. I hit them with some salt and pepper right after they come out of the pan. Of course the healthy version steamed with onion is good too. But the crunch and oil make them so delicious.
