Roma tomatoes are a fleshy fruit growing in clusters with very little seeds. They work great for sauces. As mine ripen I will be cooking an endless supply of spaghetti and pizza sauce to freeze for winter use. This year I'm going to try to take a short cut on my winter chili making and create a base to be frozen. When the snow is flying all I have to do is add meats/and or beans to the base. My adventure with the romas will be documented here for your viewing pleasure. Once they start getting ripe I will be looking for empty space anywhere in the kitchen to pile them. My challenge this year is to create sauces using only herbs, peppers, onions and tomatoes that I have grown.
