1 cup peanut butter creamy
1 1/3 cups sugar (reserve 1/3 cup for pressing cookies)
1 tsp vanilla extract
Preheat the Oven to 350°. Spray a large cookie sheet with non-stick cooking spray. In a medium mixing bowl combine the peanut butter and 1 cup of the sugar, vanilla and egg. Stir well. Roll the dough into walnut size balls and place on baking sheet. Dip a fork in the reserved sugar and press criss cross pattern into each ball of dough. Sprinkle any reamining sugar over the cookies and bake for approximately 10 minutes. Cool slightly before removing from the pan.
