Swiss Steak Mozzarella

At our house this recipe is prepared when I'm feeling like we need a good old fashioned sit down at the dinner table type of meal. This isn't overly difficult to prepare but it has a long cooked satisfying feel. It's probably good enough for your special occasion and easy enough for everyday.

2 lbs. beef round steak
3 Tablespoons all purpose flour
1/2 cup of butter
1 can (16 oz) tomatoes
1 tsp. salt
1/4 tsp. black pepper
 2 basil leaves finely chopped
1/2 cup chopped green pepper
1 1/2 cups of mozzarella cheese

Cut meat into thin strips. Serving size bites. Coat with flour. Melt the butter in a skillet and brown meat slowly on all sides. This may need to be done in several batches adding extra butter if needed. Place browned meat into a 9x13 baking dish. Combine tomatoes,salt, pepper,basil and green pepper. Pour over meat and bake covered at 350° for one hour or until meat is tender. Remover cover. Sprinkle with cheese and bake an additional 5 minutes or just until the cheese is melted.

This recipes is great served over buttered noodles. Or mashed potatoes, Or brown rice.
